Vin Jaune Maison Pierre Overnoy 1989 is a rare and compelling expression of the Jura’s most emblematic style. Born in the village of Pupillin, this wine reflects a traditional, low-intervention approach that has made the domaine a reference for passionate connoisseurs. From a great mature vintage, it offers a complex, oxidative profile shaped by time and patience, with remarkable depth and finesse rather than sheer power.
Origin and Winemaking
- The wine hails from the Jura, a cool, limestone-rich region in eastern France, where marl soils and hillside exposures favor slow ripening and high natural acidity. This terroir is particularly suited to the production of long-lived, characterful vins jaunes.
- The cuvée is produced from the Savagnin grape, the historic white variety of the Jura, renowned for its tension, aromatic intensity and its affinity with oxidative ageing under a protective film of yeast known as “voile”.
- Vinification follows the classic method for vin jaune: fermentation in tank or barrel, then a long élevage in old oak barrels, traditionally around six years, without topping up. During this period, the veil of yeast slowly develops on the surface, protecting the wine partially from oxidation while bringing notes of nuts, spices and curry. Bottling takes place after this extended maturation, yielding a wine of great aromatic concentration, designed for decades of ageing.

Deep golden hue with amber reflections, showing a dense, almost oily texture that clings to the glass, a sign of both age and concentration.

Very complex bouquet, opening with walnuts, toasted almonds and hazelnuts, then evolving towards dried yellow fruits, curry, saffron, fenugreek, and subtle oxidative notes reminiscent of fino sherry, all framed by a delicate hint of dried flowers and undergrowth.
- Palate
Dry, incisive and expansive, with a powerful yet finely chiselled structure. The acidity of Savagnin brings great tension and length, carrying flavors of nuts, candied lemon, green walnut, spices and a light saline edge. The finish is extremely persistent, leaving a lingering impression of spice and savory complexity.
