The cuvée
Salon 2015 is a rare and precise expression of a single terroir, a single grape and a single year. Produced exclusively from Chardonnay and always as a vintage Champagne, it embodies the purest interpretation of the Côte des Blancs, with a style that is both chiselled and profoundly refined. In this 2015 vintage, the wine combines luminous freshness with a more enveloping texture, offering a Champagne of great tension, length and finesse, destined for patient and attentive wine lovers.
Origin and Production
- The grapes come from the prestigious village of Le Mesnil-sur-Oger, in the heart of the Côte des Blancs, a terroir renowned for its chalk-rich soils that give Champagne its verticality, minerality and saline precision.
- The cuvée is made from 100% Chardonnay, in the purest Blanc de Blancs tradition, highlighting the elegance, energy and ageing capacity characteristic of this grape in the region.
- Vinification follows a rigorous and minimalist philosophy: careful selection of the best plots, gentle pressing and long ageing on lees in bottle to slowly develop complexity, fine bubbles and a creamy yet taut texture, without masking the identity of the vintage.
Tasting
- Appearance
Pale gold colour with silver highlights, crystalline and bright. The effervescence is extremely fine and persistent, forming a delicate, continuous cordon that reflects meticulous ageing.
- Nose
Precise and gradually unfolding, with notes of citrus zest, white flowers and chalk, followed by hints of fresh almond, brioche and a light touch of ripe stone fruit. The mineral register remains dominant, bringing a sensation of purity and depth.
- Palate
The attack is straight and vibrant, then the wine broadens with a silky, perfectly balanced texture. Flavours of lemon, pear and crunchy apple mingle with a marked chalky imprint and subtle pastry nuances. The finish is long, saline and mouth-watering, promising superb evolution for Salon 2015.
